BREEDING OF VINES: plant espalier (Guyot) (spurred cordon).

WINEMAKING: traditionally, in white with soft pressing and fermentation at controlled temperature of 16°C.
AGEING: 3 months in steel.
COLOR: straw yellow.
BOUQUET: significantly grater and pleasant aromas of white flowers, with notes of irris. On the final remain notes of honey.
TASTING NOTES: fresh,sapid, balanced and full bodied. Persistent, with recall of olfative notes, sympathetically acid.
FOOD MATCHES: the wine is simple but non-trivial, suitable for aperitifs, ideal for fish dishes: shellfish, crustaceans and fresh soft cheese.
SERVING TEMPERATURE: 8°-10° C.
